Abstract

This essay suggests that the manner in which colonial botany supplanted the realities of colonized lands and peoples has again today resurged in the zeitgeist by way of the scientific and objective knowledges that underscore global Modernist Cuisine. This essay looks specifically at the visual oeuvre of contemporary Mexican Chef Enrique Olvera, whose perceived culinary genius and penchant for the "discovery" of indigenous Mexican food harkens back to the fraught production of knowledge that botanical illustrations and studies espoused in the colonial era.
