The objective of the slaughter process is to efficiently convert live animals into carcasses, and to harvest dress-off items and offals. The commercial slaughter process for live cattle generally is uniform across the industry. Discussion in this article will focus on those processes that occur between receipt of live cattle and carcass evaluation and grading.
